Last year, Joe and I made our first St. Patrick’s Day feast. We did a quick search and came up with three recipes that all turned out extremely well [in fact we are making them again this year since my parents are visiting!].
I started out with Beef and Guinness Stew. This is a wonderful hearty stew but be warned: it does take about three hours to cook. For a side, we opted to make Irish Soda Bread. Neither of us had ever made it before and it was surprisingly simple. It paired well with the stew also we tried some bread with homemade olallieberry jam–it was incredible. For dessert, you can never go wrong with brownies. We made Guinness Brownies [Bailey’s brownies would be good too!]. To be honest, it was a little too much food [the brownies were rich] but it would be fun for a large group AND you’ll have tons of leftovers.
The weather is a little all over the place this week in New York City. I’m hoping to take my parents to the St. Patrick’s Day Parade & we’re going to start the stew and Irish soda bread in the afternoon. Nothing crazy.
