Over on Instagram, I have been posting a ton of baking content and meal ideas. I asked if you would like to see a week of dinner ideas and it was a resounding YES! We typically order takeout a few times each week so I’ve included five dinner ideas, which covers all weeknights. Since it’s just Joe and I, we cook smaller quantities and we like to keep things simple. For more meal inspiration, follow me on Pinterest and check out my all time favorite recipes. Spanish Tortilla

If you’re looking for something easy, filling, and great for leftovers, I’ve got you covered. I love Tortilla Española (Spanish Tortilla), especially since I studied abroad in Valladolid, Spain in college! My coworker, Ellen, recently posted this recipe and I had to try it right away. This dish is essentially eggs, potatoes, and vegetables. Joe and I love using our cast iron skillet so we sautéed the vegetables, poured over the egg, and popped it in the oven. It was quick and delicious!

Penne Vodka

One of my favorite meals that I’ve made throughout quarantine has to be penne vodka. I’m a huge fan of Il Fornaio’s penne vodka. My dad came across their recipe and sent it over. This recipe tastes exactly like it does in the restaurant AND it’s incredibly easy. Learn to make it in my IGTV video!

Beef Tacos

Tacos are undoubtably one of our staple recipes. We cook up some ground beef with bell peppers, onions, and plenty of taco seasoning. I love to top them with cheese, salsa, and guacamole (if we have a ripe avocado). On this night, we actually made our own flour tortillas for the first time. It was surprisingly easy and they tasted 100% better than store bought. Also, we used to make crockpot chicken tacos all the time – you just throw in a chicken breast, taco seasoning and salsa into a crockpot. Both are delicious options!

Lemon Dill Salmon

This meal is great because it requires very little clean up and is packed with flavor. Lemon salmon with dill yogurt sauce and potatoes – it’s great! You throw everything onto parchment paper so it’s all done at the same time and you don’t even need to clean a baking sheet.

Personal Pizzas

Another staple dinner for Joe and I – homemade pizzas! We usually pick up our dough from Whole Foods or Trader Joe’s (their garlic & herb pizza dough is incredible). Joe divides the dough in half and we each make our own personal pizza. I usually top mine with pepperoni and oregano. If we have fresh basil, that’s always a plus. Of course you have to add some fresh grated parmesan on top after pulling them out of the oven.
